I usually wake up with new ideas that are continuations of what I was working on the night before. When I look at my phone in the morning, it derails my train of thought.
I know one person who brings a tiny notebook in their pocket wherever they go. They still have their phone, but they use the notebook for passing thoughts. I just don't like having so much stuff in my pockets, otherwise I would probably do the same. Also, it's just mechanically easier to type down notes on my phone. You kinda need a hard surface like a desk to write comfortably by hand.

Those definitely count. Pretty much anything with numbers, letters, information that your brain latches onto and processes.
Ever try placing your phone screen-down on the desk? That helps me a TON.

I do use an app called Werdsmith, and get quite a lot of writing done on the go.
